Baked Ricotta Cheese Pie

Ingredients for pie recipe
180 grams of cookies
90 grams of dry coconut, not sweetened
125 grams of melted butter
4 eggs
250 grams of sugar
Lime juice and grated peels of 2 lemons
500 grams of ricotta cheese
60 grams of chopped, peeled almonds
Praline, for serving
Whipped cream, for serving
Preparation
1. To prepare the base of the pie crush the cookies and the coconut until they are well ground. Put them in a bowl and mix with the melted butter. Place this dough in a 25-centimeter mold and keep in the refrigerator until it solidifies.
2. For the filling, beat the eggs in a recipient until they are spongy. Gradually add in the sugar and then the lime juice and the grated lemon peel.
3. In another recipient mix the ricotta cheese and the peeled almonds. Little by little go adding in the egg and lemon mixture on the top of the cheese.
4. Pour the filling over the prepared pie base and bake it at a moderate temperature of 190 degrees for 40 minutes. Let it cool. To serve, decorate with the whipped cream and praline.

Pavlov Chocolate and Hazelnut Pie

Ingredients for this pie recipe
6 egg whites
A pinch of salt
500 grams of confectioner’s sugar
2 tablespoons of instant coffee
4 teaspoons of cornflour
2 teaspoons of vinegar
Toasted almonds, slightly chopped to decorate
Double whipped cream
Truffle sauce, for serving
Preparation
1. If you have a gas oven, preheat it at 230 degrees, if you are using an electric oven, preheat it at 150 degrees.
2. Beat the eggs with the salt. Add in the sugar in small amounts while constantly stirring. Once all the sugar has been mixed in, add in the instant coffee, the cornflour, and the vinegar. Pour this into a 20-centimeter mold.
3. With a gas oven, lower the temperature down to the minimum and put the pie in and bake for 1 ½ hours or until it is golden on the top.
4. With an electric oven, put the pie in to bake for 45 minutes. Turn the oven off and let it sit with the door shut for one hour.
5. When the Pavlov pie is ready, take it out of the oven and let it cool. Place the whipped cream on the to and pour the truffle sauce over it and garnish it with the almonds.
Serves 6 to 8.

Chocolate and Banana Pie

Ingredients for this pie recipe
17 whole wheat cookies, ground
1 tablespoon of sugar
3 teaspoons of ground cinnamon
8 tablespoons of melted butter
60 ml of water
3 teaspoons of Jell-O powder
105 grams of chopped chocolate
1 teaspoon of sugar
400 grams of firm tofu
125 ml of double cream
2 small bananas, chopped 
1 teaspoon of honey
Banana slices, for decorating
30 grams of black chocolate

Preparation
1. To prepare the base, mix the ground cookies, the sugar, and the cinnamon in a medium-sized recipient. Add in the melted butter and put it into a 23-centimeter mold and refrigerate.
2. For the filling, put the water in a small pot and add in the Jell-O and let it sit for one minute. Add in the chocolate and the sugar and heat over medium heat stirring constantly until the chocolate melts. Do not let it boil though. Take it off the heat and let it cool for five minutes.
3. Mash the tofu in a blender until you obtain a fine cream. Put aside around 90 ml to use for decoration. In the blender, without turning it off, gradually go adding in the chocolate mixture and blend until all the ingredients are mixed in evenly. Then put this into a big recipient.
4. Beat the cream in a deep bowl and slowly go adding in the tofu. Place the banana slices over the base of the pie and pour the tofu on top. Then put this in the refrigerator until it becomes firm for around 2 hours.
5. To serve, decorate the top of the pie with banana slices. In a small recipient, pour in the tofu and the rest of the honey. Put this in a decorator’s tube and decorate the pie in the center or on the sides. With a vegetable cutter, cut chocolate strips to garnish as well.
Serves 8.
